NOW AVAILABLE! This wine is farmed and harvested from Caretto Vineyard in Sonoita, AZ. The block of Graciano is roughly 1/2 an acre and the jewel of the property. This is a fruit forward wine, high acid wine aged in neutral oak. Would pair well with chicken thighs or a fatty fish like salmon.
Tannic and full bodied, but not overwhelming, notes of tomato, cherry, and blueberries.
Picked at 22.5 B, and 3.56pH. Roughly 2T per acre of fruit.
80% destemmed, 20% whole cluster fermentation
Food Pairing Notes
Pairs well with stews and chili in the winter months and salads with balsamic glaze and skirt steak in the summer.
